TEA SOURCING: Havukal Estate, Nilgiri District, India

THE STORY OF HAVUKAL WINTER HARVEST

According to the Mohan family, owners of Havukal Estate in south India's Nilgiri district, world class teas can be eco-friendly. They should know. This incredible Estate produces some of the world's finest orthodox black teas, with an operation that takes environmental stewardship seriously.

The entire Nilgiri District, situated in Southern is a single-use plastic-free zone—the result of a local grassroots campaign. This means that plastic bags, sacs or otherwise on the estate have long ago been replaced with less harmful materials.

The physical topography of the area aids in facilitating environmentally friendly practices. The Havukal tea fields themselves are spread out around naturally-occurring boulders and edged with vetiver, a native plant species, to help prevent soil erosion. The estate even collects water runoff from neighbouring farms and filters it for contaminants before reuse. They've even custom-built a factory to harness warm winds that help with the withering (drying) process - a feature that greatly reduces reliance on fuel-fired warming methods.

The result of all of this care and attention? Teas with a rich body and floral character that are making the tea world take notice. We've proud to offer this peerless Winter Harvest (produced in January and February) for your brewing pleasure. A true testament of Havukal quality, and a fabulous cuppa to feel good about. Here's to their continued success.

BREWING INSTRUCTIONS

BREWING INSTRUCTIONS FOR HOT TEA: Infuse one slightly heaping teaspoon for each 8 ounce cup with boiling water for 3-7 minutes.

ICED TEA BREWING METHOD (Pitcher): (To Make 1 Liter/Quart):
Infuse 6 slightly heaping teaspoons of tea with 1 1/4 cups of boiling water for 5 minutes.  Quarter fill a serving pitcher with cold water, and add the infused tea, straining the leaves, to the pitcher.  Add ice and top-up the pitcher with cold water. Add lemon and sweeten to taste. A rule of thumb when preparing fresh brewed iced tea is to increase the strength of hot tea since it will be poured over ice and diluted with cold water.

ICED TEA BREWING METHOD (Individual Serving):
Infuse 1 slightly heaping teaspoon of loose tea with 6 ounces of boiling water for 5 minutes. Add the tea to a 12 ounce glass, filled with ice, straining the leaves.  Add hot tea to a 12oz/375ml acrylic glass filled with ice, straining the tea or removing the bags. Add lemon and sweeten to taste.

NUMBER OF CUPS: 15-20 cups from each 50 grams of tea, with a single use of the leaves.  Loose leaf tea is traditionally infused 3 times, with a different flavor profile following each infusion.  Accordingly, each 50 gram bag can make up to 60 cups of tea.
