THE STORY OF CHAMOMILE ROSE

The Nile Delta, where we source our organic Chamomile, and our rose petals, is perhaps the oldest continually farmed piece of land on earth. For at least as far back as 5000 years, farmers have sewn seeds and pruned crops in the Delta, coaxing lush fields of every imaginable variety to bloom and blossom. To say the region has history is an understatement. The Nile Delta features prominently in the Old Testament of the Bible where it is called the Land of Goshen. As such it was the place the Israelites called home for 400 years before being led out of Egypt by Moses.

What made the Delta so fertile? Annual flooding. Every year the Nile would burst its banks and flood the plains alongside the river. River-silt loaded with nutrients and minerals would be carried and deposited along the banks. This silt served as a natural fertilizer for the year's crops and made the flood a highly anticipated event. Although the 1902 completion of the Aswan dam put an end to the annual flood, to this day the Nile Delta is still home to wonderfully rich soil that infuses its agricultural produce with intense flavor.

We blend this organic Egyptian Chamomile with Rose petals to make a lovely, floral drink.

BREWING INSTRUCTIONS

BREWING INSTRUCTIONS FOR HOT TEA: Infuse one slightly heaping teaspoon for each 8 ounce cup with water brought to a rolling boil (85 degrees Celcius) for 3-7 minutes.

ICED TEA BREWING METHOD (Pitcher): (To Make 1 Liter/Quart):
Infuse 6 slightly heaping teaspoons of tea with 1 1/4 cups of boiling water for 7 minutes.  Quarter fill a serving pitcher with cold water, and add the infused tea, straining the leaves, to the pitcher.  Add ice and top-up the pitcher with cold water. Add lemon to taste and sweeten to taste. A rule of thumb when preparing fresh brewed iced tea is to increase the strength of hot tea since it will be poured over ice and diluted with cold water.

ICED TEA BREWING METHOD (Individual Serving):
Infuse 1 slightly heaping teaspoon of loose tea with 6 ounces of boiling water for 7 minutes. Add the tea to a 12 ounce glass, filled with ice, straining the leaves.  Add hot tea to a 12oz/375ml acrylic glass filled with ice, straining the tea or removing the bags. Add lemon and sweeten to taste.

NUMBER OF CUPS: 15-20 cups from each 50 grams of tea, with a single use of the leaves.  Loose leaf tea is traditionally infused 3 times, with a different flavor profile following each infusion.  Accordingly, each 50 gram bag can make up to 60 cups of tea.
